Vegetarian Mexican Salad

A colorful salad served at parties or picnics. A truly mouth-watering salad and a huge hit whenever I present it.

Ingredients:

2 ½ cups shredded lettuce
¾ cup canned red beans drained
½ cup canned corn, drained
10 pieces cherry tomatoes
½ cup black olives, pitted
½ cup cheddar cheese, grated
100 g./3.5 oz. bag nacho chips

For the dressing:

2/3 cup mayonnaise
2 tablespoons white vinegar
¼ cup water
½ teaspoon cumin powder
A pinch salt
A dash chili powder

Directions:

In a large bowl, combine lettuce, red beans, canned corn, cherry tomatoes, and black olives.
Sprinkle grated cheese on top.
Place the nachos around the edge of the bowl.
In another bowl, beat the mayonnaise, vinegar, water, cumin powder, salt, and chili powder with a wire whisk.
Drizzle dressing over each serving.
