Soup is sure to be the first thing that leaps to mind when you plan your Ramadan menu; lots of cooks will be looking for new soup ideas during the holy month for a reason; it may very well be the perfect food to get sooth your empty stomach and one of the most comforting things you can eat after a long fasting day! I’m excited to share all my favorite soup recipes that I make for family and friends, they deserve a special place on everyone’s Ramadan table.

Lebanese Brown lentil Soup:  The recipe is my late my grandma’s! Granny or “Teta Roro”, as we used to call her, was known in her community as a highly skilled cook, there is something about her recipes that has stood the test of time, and this soup was one of her prized delicacies that showed up nearly at every extended family gathering.

Lebanese Red Lentil Soup with Vegetables! An authentic Lebanese and Middle Eastern soup that is associated with Ramadan but can be enjoyed year-round, particularly on a rainy day. The red lentil soup is among the favorite soups all over Lebanon and Middle East. It may vary from one country to another and even from one home to another.  Its creamy smoothness makes it endlessly appealing, nourishing and comforting, especially after a long fasting day

Turkish Red Lentil Soup / Mercimek Çorbası: is a one that calms down the hunger, eliminates the tension of the day, and excites the appetite after a long day of fasting, yes, so satisfying, and knowing how nourishing and healthful it is brings another layer of contentment. The soup has been given the thumbs up by friends and guests who had it at my house — in addition to all its other virtues, it’s vegan and gluten-free! It is is a copycat of a soup I had during my last visit to Istanbul, this was a few weeks ago! Ramzi took me to the Atolye restaurant at the Ritz Carlton hotel in Istanbul.

Corn Chicken Soup from Scratch:while not a specific dish to Ramadan (like Lebanese Brown Lentil SoupTurlish Red Lentil Soup/ Mercimek Çorbası and Lebanese Red Lentil Soup), it is still a family favorite. Obviously, this “Corn Chicken Soup from Scratch” is neither Lebanese nor Middle Eastern but it is a one we regularly make once or twice at our house during Ramadan, we make it throughout the year as well, often as a handy one pot soup, so if you’re on the hunt for a new chicken soup  let’s make a batch together. I bet you’re going to love it.

Adas Bhamod/ Lebanese Sour Lentil Soup: this comfy home-style soup is a belly warming treat that my mom made all the time when I was growing up; this was the first soup that I learned because it is an essential and popular soup in Lebanese cuisine.  With few ingredients and straightforward instructions, you will surprise and delight your taste buds the best way possible. A bowl of Adas Bhmad is loaded with flavor, color and texture!

Broccoli and Cheese Soup

There is nothing more satisfying than sipping a steaming bowl of soup after a long fasting day. It is a quick and tasty one made with fresh broccoli, cheese, milk and sautéed onions. If you prefer a smooth soup, feel free to blend it, though I like it chunky.

Asparagus-Potato Soup: What could be better than a hot steaming bowl of soup in the cold weather. This creamy asparagus-potato soup is full of rich flavors. I just love the combination.

Creamy Carrot Soup

The ginger and curry leaves give the soup a comforting aroma and taste and the end result is something that is not only tasty, but really good for you! Carrots are a good source of beta-carotene and alpha- carotene which converts to vitamin A in your body (this helps maintain a healthy skin and can improve the health in your eyes) ! They are too rich in fibers !

Tomato Basil Soup

This tomato basil soup  is easy, comforting, and has a rich flavor profile, and the best way to use up fresh tomatoes. You’ll never want to go back to any tomato soup recipe!

Cream of mushroom soup is still one of my favorite soups, add this soup to your Ramadan table. It is easy to make and ready in less than 1 hour. It creamy, smooth and wonderfully luxurious!!
