What’s not to love about mfaraket batata, a comforting Lebanese potato and ground meat dish? This crave-worthy, hearty one-pan meal combines tender potatoes, minced lamb or beef, and onions for a simple yet satisfying classic. It’s easy to make, full of flavor, and hearty without feeling too heavy. Familiar yet a little different, this traditional Lebanese recipe is perfect for a cozy family dinner any day of the week.

No matter how many sophisticated recipes we cook and develop, sometimes we find ourselves going back to the basics: recipes that taste delicious, use simple ingredients, and don’t take forever to prepare. Mfaraket batata, a traditional Lebanese one-pan potato and meat hash, is exactly that kind of dish.

And who says you should save mfaraket batata for lunch or dinner? This versatile Lebanese classic is just as delicious for breakfast! Enjoy it any time of day, served as a satisfying main dish or a flavorful side.

Some versions call for frying the potato cubes before adding them to the meat and onions, but I skip that step. Instead of frying the potatoes until crispy, I add them raw to the pan, cover, and cook everything over low heat. The potatoes gently steam as they cook, soaking up all the delicious flavors of the meat and onions. The result? A comforting, flavorful dish that comes together in just 30 minutes, with less effort and no need for frying!

Ingredients for Mfaraket Batata (Lebanese One-Pan Potato and Meat Hash)

You only need a handful of simple ingredients to make mfaraket batat. Here’s what you’ll need:

  • Potatoes: Any variety will work, but I gravitate toward Russet potatoes because their high starch content helps the cubes hold together with the other ingredients as they cook, giving the dish its signature texture. Yukon Gold potatoes are another excellent choice, offering a slightly creamier texture.
  • Ground beef or lamb: Both work beautifully in this recipe. I recommend using meat with a higher fat content for a richer flavor and a more succulent result.
  • Ghee or neutral oil: You’ll need a little fat to sauté the meat and onions and bring all the flavors together. Ghee adds a lovely richness, but any neutral cooking oil works well.
  • Onion: Red or white onions are both great choices. They add sweetness and flavor as they cook with the meat.
  • Salt: Essential for seasoning the potatoes and meat and bringing out their natural flavors. Adjust to taste.
  • Freshly ground black pepper: Adds a gentle kick and a lovely depth of flavor. For the best appearance, stir it in toward the end of cooking to help prevent the potatoes from darkening.
  • Fresh parsley: A handful of freshly chopped parsley adds a pop of color and freshness. Sprinkle it over the finished dish just before serving.

Can I Use Butter Instead of Oil?

I recommend avoiding butter for this recipe because it has a relatively low smoke point and can burn during cooking. Ghee is my preferred choice because it adds a lovely richness and has a higher smoke point. Sunflower oil is a close second if you prefer a neutral-tasting oil.

Tips for Making the Best Mfaraket Batata

Making mfaraket batata (Lebanese one-pan potato and meat hash) is pretty straightforward, but a few simple tips can make all the difference. Here’s how to get the best flavor and texture every time.

  • Remove excess moisture from the potatoes: This is one of my favorite tricks for achieving the right texture. Toss the raw potato cubes with salt and let them sit for 30 minutes. Then, squeeze out as much excess liquid as possible using your hands or a clean kitchen towel. This helps the potatoes cook without becoming overly soggy.
  • Peel the potatoes thoroughly: Remove the skin and any discolored flesh just beneath it. This helps prevent unwanted discoloration as the potatoes cook and keeps your finished dish looking appetizing.
  • Cut the potatoes into evenly sized cubes: Aim for cubes about ¾ inch (2 cm) thick. Uniform pieces cook more evenly, so you won’t end up with some potatoes overcooked while others remain firm.
  • Season as you go: Proper seasoning is essential for a flavorful mfaraket batata. Taste the meat and onion mixture as you cook, and adjust the salt as needed to ensure every bite is delicious.

How to Make Mfaraket Batata (Lebanese One-Pan Potato and Meat Hash)

Step 1: Prepare the potatoes.

Peel the potatoes and cut them into evenly sized cubes, about ¾ inch (2 cm) thick. Toss them with 1 teaspoon of salt and set aside for 30–40 minutes to draw out excess moisture.

Use your hands to squeeze out as much excess liquid as possible. This is a crucial step to help the potatoes hold their shape and prevent your mfaraket batata from becoming soggy.

Preheat a large, heavy-bottomed stainless steel skillet over medium-high heat. Add the oil and onion, and sauté until the onion softens and begins to wilt.

Add the ground meat and cook over medium heat, stirring occasionally, until browned and cooked through, about 7–8 minutes.

Add the potatoes and stir well to combine them with the meat and onions. Cover the skillet, reduce the heat to low, and cook for about 20 minutes, stirring occasionally with a spatula to prevent the mixture from sticking to the bottom of the pan.

The mfaraket batata is ready when the potatoes are tender and offer no resistance when pierced with a fork. Taste and adjust the salt as needed, then add a generous pinch of freshly ground black pepper. Sprinkle with finely chopped parsley for a fresh finish, and serve warm with Lebanese bread or pita bread.

This hearty Lebanese potato and meat hash pairs beautifully with a side of plain yogurt. Sahtain! (Bon appétit!)
