Thick Mini Pizza

Homemade thick mini pizza dough with anchovy. The whole family loves the wonderful flavor and aroma of these. I make big batches and keep in my freezer. They make a great solution for unexpected guests.

Ingredients:

For the dough:

4 cups flour
1 tablespoon active dry yeast
½ cup canola oil
1 egg
½ cup warm milk
½ warm water
2 tablespoons sugar
A pinch of salt

For the filling:

3 canned tomatoes (425 g./15 oz. each)
1 or 2 anchovy fillet, mashed to a paste
¼ cup olive oil
1 onion, finely chopped
1 garlic clove, minced
A dash of dried oregano
A dash of dried basil
Salt and pepper to taste
A dash of cayenne pepper (optional)

2 cups of grated mozzarella

Directions:

To prepare the dough:

In a large bowl combine flour, salt, sugar, yeast, and oil .
Mix the egg with milk and water then add to the flour mixture.
Knead the mixture (with your hands or with a stand mixer) until the dough comes together. Knead one more time (the more you knead the better the result).
Transfer the dough to a large clean bowl and cover with a kitchen towel. Set aside for 1 hour or until it doubles in volume.

For the filling:

Place oil in a saucepan over medium heat. Add the onion and stir until translucent.
Add the garlic and cayenne pepper. Season with salt and pepper.
Add the tomatoes and anchovy paste to the saucepan. Reduce heat to very low and allow the tomato sauce to simmer for 30 minutes. Set aside to cool down.

Preheat oven to 200C/400F.
When the dough has doubled in size, transfer to a floured counter.
Stretch the dough with a rolling pin to a thickness of ½ inch or about 1 cm.
With a round cutter, cut the dough and place the rounds on greased baking sheets.
Top each mini dough with pizza sauce and cheese (can be topped with slices of black olives).
Bake about 10-15 minutes or until the crust is golden and the cheese has melted.Enjoy!
