How to Make Lebanese Vegetable and Beef Soup
1. Brown the Beef
Heat the olive oil in a large stockpot over medium heat. Add the beef cubes and sauté for about 5 minutes, or until the beef is browned on the outside.
2. Add the Aromatics
Add the sliced onions and garlic to the pot. Cook, stirring occasionally, until the onions become translucent and fragrant.
3. Season the Soup
Add the cumin powder, dried marjoram, paprika, and salt. Stir for about 10 seconds to coat the beef and aromatics with the spices.
4. Add the Vegetables and Liquid
Stir in the diced carrots, potato cubes, green and red bell peppers, and chopped tomatoes. Pour in the water and add a beef bouillon cube, if desired.
5. Simmer
Bring the soup to a boil, then reduce the heat to low. Cover and simmer for about 1 hour and 20 minutes, or until the beef is tender and the vegetables are cooked through. The longer the soup simmers, the more the flavors come together.
6. Serve
Ladle the hot vegetable and beef soup into bowls and serve with crusty artisan bread for dipping.

Tips and Tricks
- Use beef bouillon for extra flavor: It is optional, but adding a beef bouillon cube gives the broth an extra layer of savory flavor.
- Keep it gluten-free: The soup itself is naturally gluten-free. If serving it with bread, choose certified gluten-free bread.
- Make it ahead: Like many hearty soups, this one develops even more flavor after resting.
- How to peel tomatoes: Place the tomatoes in boiling water for a few seconds. Remove them with a slotted spoon and allow them to cool. Then, gently peel away the skins with your fingers.
- Serve with crusty bread: The crunch of artisan bread is a delicious contrast to the rich, comforting broth.

How to Store Vegetable and Beef Soup
- Store leftover soup in an airtight container in the refrigerator for up to 4 days.
- For longer storage, allow the soup to cool completely before transferring it to freezer-safe containers. It can be frozen for up to 3 months. Thaw it in the refrigerator and reheat gently on the stovetop until hot.
