Avocado, Shrimp, and Artichoke Salad
Avocado, shrimp, cherry tomatoes and hearts of artichokes on a bed of romaine lettuce. The secret behind this successful salad is the truly unique dressing of capers and mayonnaise.
It is suprisingly simple to put together, yet so presentable and tastes so good, I hope it becomes your go to parties and gatherings!!
Ingredients:
500 g. or about 1 lb. shrimp, deveined, and deshelled
1 can 400 g./14 oz. artichokes hearts, drained
1 small head of romaine lettuce
½ cup cherry tomatoes
3 ripened avocado, peeled, pitted, and cut into wedges
The dressing:
¾ cup mayonnaise
3 tablespoons capers in brine, drained
A pinch of salt
¼ cup water
Directions:
To prepare the dressing:
In a blender combine mayonnaise, salt, and capers and process to a smooth, light green paste.
Add salt and water, mix well. Set aside.
Cook shrimp in boiling water for 3 minutes, drain, and set aside to cool down.
Spread the shredded lettuce over a serving plate.
Place the avocados, shrimp, cherry tomatoes, and hearts of artichoke over the lettuce.
Drizzle the dressing over the salad.
