Avocado, shrimp, cherry tomatoes and hearts of artichokes on a bed of romaine lettuce. The secret behind this successful salad is the truly unique dressing of capers and mayonnaise.
Ingredients
500g.or about 1 lb. shrimpdeveined, and deshelled
1can 400 g./14 oz. artichokes heartsdrained
1small head of romaine lettuce
½cupcherry tomatoes
3ripened avocadopeeled, pitted, and cut into wedges
The dressing:
¾cupmayonnaise
3tablespoonscapers in brinedrained
A pinch of salt
¼cupwater
Instructions
To prepare the dressing:
In a blender combine mayonnaise, salt, and capers and process to a smooth, light green paste.
Add salt and water, mix well. Set aside.
Cook shrimp in boiling water for 3 minutes, drain, and set aside to cool down.
Spread the shredded lettuce over a serving plate.
Place the avocados, shrimp, cherry tomatoes, and hearts of artichoke over the lettuce.
