Description

Avocado, shrimp, cherry tomatoes and hearts of artichokes on a bed of romaine lettuce. The secret behind this successful salad is the truly unique dressing of capers and mayonnaise.

Ingredients
 

  • 500 g. or about 1 lb. shrimp deveined, and deshelled
  • 1 can 400 g./14 oz. artichokes hearts drained
  • 1 small head of romaine lettuce
  • ½ cup cherry tomatoes
  • 3 ripened avocado peeled, pitted, and cut into wedges

The dressing:

  • ¾ cup mayonnaise
  • 3 tablespoons capers in brine drained
  • A pinch of salt
  • ¼ cup water

Instructions
 

To prepare the dressing:

  • In a blender combine mayonnaise, salt, and capers and process to a smooth, light green paste.
  • Add salt and water, mix well. Set aside.
  • Cook shrimp in boiling water for 3 minutes, drain, and set aside to cool down.
  • Spread the shredded lettuce over a serving plate.
  • Place the avocados, shrimp, cherry tomatoes, and hearts of artichoke over the lettuce.
  • Drizzle the dressing over the salad
