Description
Avocado, shrimp, cherry tomatoes and hearts of artichokes on a bed of romaine lettuce. The secret behind this successful salad is the truly unique dressing of capers and mayonnaise.
Ingredients
- 500 g. or about 1 lb. shrimp deveined, and deshelled
- 1 can 400 g./14 oz. artichokes hearts drained
- 1 small head of romaine lettuce
- ½ cup cherry tomatoes
- 3 ripened avocado peeled, pitted, and cut into wedges
The dressing:
- ¾ cup mayonnaise
- 3 tablespoons capers in brine drained
- A pinch of salt
- ¼ cup water
Instructions
To prepare the dressing:
- In a blender combine mayonnaise, salt, and capers and process to a smooth, light green paste.
- Add salt and water, mix well. Set aside.
- Cook shrimp in boiling water for 3 minutes, drain, and set aside to cool down.
- Spread the shredded lettuce over a serving plate.
- Place the avocados, shrimp, cherry tomatoes, and hearts of artichoke over the lettuce.
- Drizzle the dressing over the salad
