Fasolia Areeda Bil Zeit, Vegan Lebanese Style Lima Bean Stew
Beans are a nutritious staple enjoyed around the globe, and every culture has its own unique way of preparing them. Growing up, Fasolia Areeda Bil Zeit—a comforting vegan Lebanese-style lima bean stew—frequently graced our family lunch table. While Lebanon is well-known for its rich, meat-based stews, this traditional meatless version is just as hearty and absolutely delicious. Simmered to perfection, this rustic dish brings together the best of classic Mediterranean flavors, combining high-quality olive oil, fresh tomatoes, and plenty of garlic into a deeply satisfying meal.
Fresh lima beans are a true seasonal delight, generally available at the peak of their flavor during October and November. These vibrant legumes are incredibly nutrient-dense; they are an excellent source of dietary fiber, low in calories, and packed with essential minerals like potassium, folate, copper, iron, and magnesium. Loaded with health-boosting antioxidants and complex carbohydrates, they provide clean, sustained energy.
In my opinion, their starchy, buttery texture and creamy, delicate flavor easily place them at the very top of the ultimate comfort food list. Not only are they absolutely delicious, but fresh lima beans also cook up in no time—making them well worth searching for when they are in season!
The earthy flavor of lima beans is the perfect foil to the bright notes of garlic and cilantro, while a pinch of cayenne pepper adds a welcome kick to this humble Lima Bean Stew.
How to Prepare Fresh or Frozen Lima Beans for Stew (Fasolia Bil Zeit)
Because this recipe features fresh or frozen lima beans, there is absolutely no need to soak them overnight! Simply place the beans in a large pot of water and bring it to a boil. Be sure to skim off any foam or scum that rises to the surface. Next, reduce the heat to low, let them simmer for just 5 minutes, and then drain and discard the cooking water.
Why do we drain the water? This traditional cooking trick is highly effective at reducing flatulence. Beans naturally contain a high amount of complex sugars that the human body sometimes struggles to break down. Parboiling the beans briefly and changing the water draws out these troublesome sugars, ensuring your finished Fasolia Bil Zeit is light, comfortable, and easy to digest!
Can I Use Dried Lima Beans Instead of Fresh?
Absolutely! However, using dried lima beans requires a bit of advance planning. Here is how to prepare them perfectly for this stew:
Soak the Beans: Place 2 cups of dried lima beans in a large bowl, cover with 8 cups of water, and allow them to soak overnight.
Boil and Skim: The next day, drain the soaking water and transfer the beans to a large pot. Cover them with fresh water and bring to a boil over high heat, skimming off any foam or scum that rises to the surface.
Simmer Low and Slow: Reduce the heat to low, cover the pot, and let them simmer for about 1½ hours, or until the beans are completely cooked through.
The Golden Rule: The absolute key to success is cooking the beans low and slow. You want them to turn perfectly tender and creamy, but not mushy. Once they are tender, simply drain them and proceed with the recipe exactly as written.
Can I Use Different Types of White Beans?
Yes, you can! The savory tomato, garlic, and cilantro foundation of this recipe works wonderfully with almost any variety of white beans.
Cannellini beans are a popular alternative and are frequently used to make this style of stew. While they differ slightly from lima beans in shape, texture, and flavor, they still yield a deeply comforting and satisfying result. That being said, lima beans remain my absolute favorite for this specific dish because their exceptionally large size and unique, buttery texture are truly unmatched!
How to Serve Fasolia Bil Zeit
You can easily enjoy this dish as a vibrant side or an appetizer on your mezze spread. However, you will be equally happy eating a hearty bowl of Fasolia Bil Zeit as a satisfying main dish, accompanied by vermicelli rice or warm Lebanese pita bread. For the ultimate flavor experience, serve it alongside crisp radishes and a fresh squeeze of lemon juice to balance the rich, savory undertones—this final touch is optional but highly recommended!
