If you are looking for a comforting, plant-based meal that is deeply satisfying, look no further than Mujadara Makbousa (also spelled Mujadara Makhboussa). Unlike the traditional dry lentil and rice pilaf that many are familiar with, this unique Lebanese variation is a hearty, nutrient-dense, slow-cooked dish that sets into a thick, comforting porridge. In Lebanon, we take pride in our many diverse variations of mujadara, and this specific recipe highlights how beautifully brown lentils are suited to low-and-slow cooking.
The word makboussa in Arabic translates directly to “mushy” or “pressed,” which perfectly describes the incredibly rich and creamy texture of this dish. This recipe requires a longer cooking time because our ultimate goal is to simmer the brown lentils and short-grain rice together until they are superbly tender, fully broken down, and a bit mushy. Infused with cumin and a generous pour of slow-cooked onions, it delivers an incredible depth of flavor without a single drop of dairy. It is the absolute perfect, rustic comfort food to enjoy warm or at room temperature with a side of crisp fattoush salad and tangy pickles.

Description
Mujadara Makhbousa is a hearty, creamy, and nutrient-dense, slow-cooked mujadara that forms a thick porridge rather than a dry pilaf.
Ingredients
- 1 cup brown lentils
- 6 tablespoons medium-grain rice such as Jasmine rice
- 6 cups water
- 3 large onions finely chopped
- ¼ cup olive oil or sunflower oil
- 2 tablespoons olive oil
- 1 ½ teaspoons salt or to taste
- A dash of freshly grated black pepper
Instructions
- Rinse and drain the lentils and rice, then place them in a large cooking pot. Add the water and bring to a boil. Reduce the heat to very low, cover the pot, and cook for 1 hour, stirring every 10 minutes.
- Meanwhile, add the canola oil and olive oil to a frying pan and sauté the onions over medium heat, stirring until they turn light brown. Add the onions to the lentils, and season with salt and pepper.
- Cook for another 30 minutes over very low heat until the lentils are fully cooked and slightly mashed. The consistency should be similar to that of a thick soup. Serve warmed with pita bread, a green salad, or fattoush. Enjoy!

You make some great points about lentils. Like you, there are things I didn’t like as a child but have come to appreciate as an adult.
