Mujadara Makhbousa is a hearty, creamy, and nutrient-dense, slow-cooked mujadara that forms a thick porridge rather than a dry pilaf.
Ingredients
1cupbrown lentils
6tablespoonsmedium-grain ricesuch as Jasmine rice
6cupswater
3large onionsfinely chopped
¼cupolive oil or sunflower oil
2tablespoonsolive oil
1 ½teaspoonssaltor to taste
A dash of freshly grated black pepper
Instructions
Rinse and drain the lentils and rice, then place them in a large cooking pot. Add the water and bring to a boil. Reduce the heat to very low, cover the pot, and cook for 1 hour, stirring every 10 minutes.
Meanwhile, add the canola oil and olive oil to a frying pan and sauté the onions over medium heat, stirring until they turn light brown. Add the onions to the lentils, and season with salt and pepper.
Cook for another 30 minutes over very low heat until the lentils are fully cooked and slightly mashed. The consistency should be similar to that of a thick soup. Serve warmed with pita bread, a green salad, or fattoush. Enjoy!
