This is an affordable, budget-friendly dish, as lentils and pasta make up the bulk of the recipe! What makes Horaa Osbao truly special is its delicious balance of sweet, sour, and savory flavors, all coming together in perfect harmony.

I had heard so much about Horaa Osbao (also known as Harak Osbao), but it wasn’t a dish I grew up eating, and I had never actually tried it until a dear and caring friend of mine, Im Ziad, hosted a ladies’ gathering at her home.

I still remember how proudly she presented the dish, explaining that it was a must-have starter at family gatherings and get-togethers with friends. We absolutely loved it, and Im Ziad graciously shared her recipe with me!

The recipe had been sitting in my drafts folder for over a year, but a few days ago, Horaa Osbao suddenly popped into my mind, and I couldn’t resist making it! I followed Im Ziad’s recipe exactly as written, and it turned out perfectly. Even my husband declared that this delicious Syrian lentil and pasta stew deserved a regular spot in our dinner rotation!

Horaa Osbao (Harak Osbao): The Secret to Its Irresistible Sweet, Sour, and Savory Flavors

The lentils and pasta form the core base of Horaa Osbao (Harak Osbao), and its complex flavor profile is driven by a few key ingredients!
First, the acidity of pomegranate molasses adds a beautifully tangy dimension to the dish. High-quality olive oil then deepens those flavor notes, perfectly balancing the tartness. What truly brings this dish to life, however, is a generous amount of fresh cilantro and garlic, while caramelized onions contribute a rich, smoky sweetness. Finally, fried pita bread adds a wonderful, satisfying crunch to every single bite.
Though fresh pomegranate seeds are entirely optional, they serve as a gorgeous garnish that brightens the overall flavor. I even love making this dish with Persian barberries (zereshk)—their sharp tartness makes a stunning addition! Rest assured, you are in for an absolute treat.

Now it’s time to create a beautiful presentation of your Horaa Osbao! Transfer the stew to one large, deep serving dish or divide it among individual deep plates.

Arrange the fried Lebanese pita bread around the edges of the dish.

Sprinkle the fried onions over the dish for a more elegant presentation and a delicious, nutty flavor!

Pomegranate seeds add a splash of color, a delightful crunch, and a touch of sweetness!

The tangy acidity of pomegranate molasses adds a delightful dimension to Horaa Osbao (Harak Osbao). If you prefer a more pronounced tartness, feel free to add a little more! Start with the amount specified in the recipe, taste as you go, and adjust to your liking.

Lentils are highly nutritious, providing plant-based protein, complex carbohydrates, and dietary fiber. Eating fiber-rich foods like lentils as part of a balanced diet may help support heart health and reduce the risk of cardiovascular disease. Lentils are also an excellent source of essential minerals, including magnesium, which plays an important role in muscle function, nerve health, and overall well-being.

Packed with plant-based protein, fiber, and wholesome ingredients, this naturally vegan dish is hearty, nourishing, and wonderfully comforting. Its irresistible combination of tangy, sweet, and savory flavors makes it a Middle Eastern favorite!

Ingredients

  • 2 cups brown or green lentils
  • 8 cups water
  • 1½ cups fettuccine noodles broken into 1-inch (2.5 cm) pieces
  • 8 garlic cloves crushed
  • 4 medium onions thinly sliced (julienned)
  • 2 cups finely chopped fresh cilantro plus a little extra for garnish
  • 1 Lebanese flatbread or 2 pita breads cut into small, equal-sized squares using scissors or a sharp knife
  • ½ cup olive oil
  • ½ cup canola oil for frying the bread
  • ¼ teaspoon ground cumin
  • ½ teaspoon salt or to taste
  • ½ cup pomegranate seeds
  • 4 tablespoons pomegranate molasses
  • 5 tablespoons lemon juice

Instructions

  • Sort through the lentils, removing any stones or other impurities. Rinse thoroughly under cold running water, then drain.
  • Pour the olive oil into a large stockpot, add the onions, and cook over medium heat, stirring every few minutes until they are nicely caramelized. Remove the onions with a slotted spoon and set aside.
  • Add the crushed garlic and chopped cilantro to the same stockpot. Sauté for a few seconds, just until the cilantro wilts and the garlic becomes fragrant. Add the lentils and ground cumin, then stir briefly to combine.
  • Stir in the water and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for about 50 minutes, or until the lentils are tender and fully cooked.
  • Meanwhile, fry the Lebanese pita bread. Heat the canola oil in a skillet, then add the bread squares in batches. Fry, stirring constantly, until golden brown and crispy. Remove with a slotted spoon and set aside to drain.
  • Once the lentils are fully cooked, add the broken fettuccine noodles. Cover the pot and continue cooking for another 10 minutes, or until the pasta is tender. Stir in the salt, pomegranate molasses, and lemon juice, adjusting the seasoning to taste.
  • The Horaa Osbao should have the consistency of a thick, hearty soup.
