Description
A colorful salad served at parties or picnics
Ingredients
- 2 ½ cups shredded lettuce
- ¾ cup canned red beans drained
- ½ cup canned corn drained
- 10 pieces cherry tomatoes
- ½ cup black olives pitted
- ½ cup cheddar cheese grated
- 100 g./3.5 oz. bag nacho chips
For the dressing:
- 2/3 cup mayonnaise
- 2 tablespoons white vinegar
- ¼ cup water
- ½ teaspoon cumin powder
- A pinch salt
- A dash chili powder
Instructions
- In a large bowl, combine lettuce, red beans, canned corn, cherry tomatoes, and black olives.
- Sprinkle grated cheese on top.
- Place the nachos around the edge of the bowl.
- In another bowl, beat the mayonnaise, vinegar, water, cumin powder, salt, and chili powder with a wire whisk.
- Drizzle dressing over each serving.
