A colorful salad served at parties or picnics. A truly mouth-watering salad and a huge hit whenever I present it.

Description

A colorful salad served at parties or picnics

Ingredients
 

  • 2 ½ cups shredded lettuce
  • ¾ cup canned red beans drained
  • ½ cup canned corn drained
  • 10 pieces cherry tomatoes
  • ½ cup black olives pitted
  • ½ cup cheddar cheese grated
  • 100 g./3.5 oz. bag nacho chips

For the dressing:

  • 2/3 cup mayonnaise
  • 2 tablespoons white vinegar
  • ¼ cup water
  • ½ teaspoon cumin powder
  • A pinch salt
  • A dash chili powder

Instructions
 

  • In a large bowl, combine lettuce, red beans, canned corn, cherry tomatoes, and black olives.
  • Sprinkle grated cheese on top.
  • Place the nachos around the edge of the bowl.
  • In another bowl, beat the mayonnaise, vinegar, water, cumin powder, salt, and chili powder with a wire whisk.
  • Drizzle dressing over each serving.
