I bet you all know Lebanese Arayes, those pita pockets stuffed with seasoned ground lamb or beef and grilled until beautifully crispy. But these Lebanese Sfeeha Arayes are a little different from the traditional Kafta Arayes! They follow the same concept, but instead of kafta filling, we use the deliciously spiced meat filling traditionally used for Sfeeha (Lebanese Meat Pies).

Craving sfeeha but don’t have time to make dough from scratch? I’ve got just the recipe for you! These easy meat-stuffed pita pockets come together in minutes, making them perfect for a quick lunch, an effortless dinner, or a busy weeknight meal that everyone will devour.

They’re also wonderful for passing around as part of a Lebanese mezze spread. After all, who doesn’t love something deliciously grilled? To turn these crispy, flavorful pita pockets into a satisfying main dish, serve them with plain yogurt, Lebanese Brown Lentil Soup, Turkish Red Lentil Soup, Lebanese Red Lentil Soup, or Lebanese Pickles (Kabees).

It’s such a handy recipe to have in your repertoire, especially when you’re craving the flavors of traditional Lebanese sfeeha without all the work of making pastry dough. Give these Sfeeha Arayes a try, and I think you’ll love them! Watch the video tutorial below to see how easy they are to make.

5 Essential Tips for Perfect Lebanese Sfeeha Arayes

1. Choose the Right Bread

Best choice: Use Lebanese pita bread or pocket pita that can be opened easily and filled with the spiced meat mixture.

Alternative: If pocket pita is unavailable, you can use flatbread or tortillas. Spread the filling over one half, fold the bread over, and cook until crisp and the meat is thoroughly cooked. The result will be slightly different from traditional Arayes.

2. Choose Meat with a 30% Fat Ratio

• For juicy, flavorful Arayes, use ground lamb, beef, or a mixture of both with a 30% fat ratio to keep the filling moist during cooking.
• Lamb adds a rich flavor, while combining lamb and beef offers a delicious balance.

3. Remove Excess Moisture

Prepare the onions: Sprinkle the finely chopped onions with salt and let them rest for 10 minutes. Squeeze them firmly between your palms and discard the excess liquid.

Drain the tomatoes: Finely dice the tomatoes and squeeze or drain them well before adding them to the meat mixture. Removing excess moisture helps prevent the pita bread from becoming soggy.

4. Choose Your Cooking Method

Panini press: This is a convenient way to cook Arayes, giving the pita bread a beautifully crisp exterior and attractive grill marks. Brush the bread lightly with oil and cook according to your press’s instructions, turning as needed.

Oven or charcoal grill: You can also bake Arayes in a preheated oven at 200°C/400°F or cook them over medium charcoal heat, turning as needed for even browning. Cooking times vary depending on the size of the pita pockets and the thickness of the filling, so make sure the meat is thoroughly cooked.

Extra-crispy finish: If the bread needs more crisping after the filling is cooked, return the Arayes to a hot oven for a few additional minutes, keeping a close eye on them to prevent burning.

5. Prepare Ahead and Serve Fresh

Make ahead: You can assemble the Arayes a few hours in advance. Arrange them in a covered container and refrigerate promptly until ready to cook. For the best texture, brush them with oil just before cooking.

Serving tip: Arayes are at their best served hot, straight from the panini press, grill, or oven, when the bread is wonderfully crisp and the meat filling is juicy. Serve them with plain yogurt, hummus, or your favorite Lebanese sides.

Step-by-Step Preparation & Cooking

Step 1: Prepare the Meat Filling

In a large mixing bowl, thoroughly combine your minced meat (featuring that optimal 30% fat ratio), spices, chili, pre-squeezed onions, garlic, oil, drained tomatoes, and a splash of pomegranate molasses for a perfect balance of sweet and tangy flavors.

Step 2: Stuff the Pita Pockets

Cut your pita breads into clean quarters. Open each pocket and fill it with a heaped tablespoon of the meat mixture. Spread the filling completely flat and even to ensure it cooks uniformly.

Step 3: Grill to Perfection

Preheat your panini press. Lightly brush both sides of each stuffed pita quarter with olive oil. Place them in the press and cook for 15 to 20 minutes, flipping every 5 minutes to guarantee even browning.
💡 Alternative Cooking Methods:
• Charcoal Grill: Cook over medium coals, turning frequently for a smoky finish.
• Oven Method: Bake in a preheated oven at 200°C (400°F) for roughly 15 minutes, flipping occasionally.

Step 4: Serve

Frequently Asked Questions (FAQ)

Can I freeze unbaked Arayes?

It is not recommended to freeze raw, stuffed arayes because the moisture from the raw meat filling will soak into the pita bread as it thaws, making it completely soggy when cooked. Instead, freeze the spiced meat mixture separately, thaw it, and stuff the fresh bread right before cooking.

How do I stop my bread from burning before the meat cooks?

Keep your heat at a steady medium setting (around 200°C/400°F if using an oven). Brushing both sides of the pita bread generously with oil protects it from burning while creating a barrier that crispifies the exterior uniformly. Flipping every 5 minutes is essential to keep the heat distributed evenly

Instructions

To Make Lebanese Sfeeha Arayes

  • Sprinkle the chopped onion with salt and set aside for 10 minutes. Finely dice the tomato and squeeze it with your hands to remove excess liquid. Squeeze the onion between your palms to drain any liquid.
  • In a bowl, combine the meat, spices, chili, drained onion, garlic, oil, tomatoes, and pomegranate molasses. Mix well.
  • Cut the pita breads into quarters. Fill each quarter with a heaping tablespoon of the meat mixture, spreading it completely flat and even to ensure it cooks uniformly.
  • Preheat your panini press. Brush the pita quarters with oil on both sides and place them in the heated press.
  • Cook for 15–20 minutes, flipping every 5 minutes to ensure even browning and that the meat cooks through. For extra-crispy Arayes, transfer them to a preheated oven for an additional 2 minutes, if desired.
