Looking for a cheesecake recipe but in a crust free mood? Then this recipe is for you!!Layers of jello, mascarpone cheese, whipped cream, and jam on top .. all in a glass. Elegant and easy, right? Mascarpone is always a winner in any dessert. If you are throwing a party and would like to prepare the dessert one or two days in advance, then this would be an ideal choice – the simple dessert will really wow your dinner guests! An absolute delight!

Feel free to top the ramekins with your favoirte berries or even stone fruits.

The jam on top adds a pleasant hint of sweetness!! Happy Eating!!

Ingredients:

  • 1 strawberry jello package (85 g./3 oz.)

For the filling:

  • 500 g./1lb. 2oz. mascarpone cheese
  • 3 cups heavy cream
  • ¾ cup cup sugar

Topping:

  • 5 tablespoons strawberry jam
  • 1 tablespoon water
  • some strawberries for garnishing (optional)

Directions:

To prepare the filling:

  1. In a bowl whip the heavy cream and sugar over medium speed until soft peaks form. Fold in the mascarpone and stir gently just to incorporate. Refrigerate.
  2. Prepare the jello following the package directions. Allow to cool.
  3. Divide the jello into medium-sized glasses, filling the bottom (covering about ⅓ of the cup).
  4. Refrigerate the glasses until the jello has firmed, but still jiggly.
  5. Spoon the mascarpone filling evenly into the glasses almost covering the top.
  6. Refrigerate for 3 to 4 hours.
  7. Combine the water and jam in a small skillet and warm over medium heat enough to loosen the jam.
  8. Garnish with strawberries and drizzle some jam over the strawberries. Enjoy.
