Chocolate Truffles
Sometimes I am just in the mood of chocolaty goodness and these chocolate truffles really hit the spot! You don’t have to pace lots of steps to make these and the best thing about them is that they require few ingredients and no cooking involved. Could anything be easier? After the first bite these will so perfectly melt in your mouth! You can vary the coatings to your taste – can be coated with chocolate vermicelli, grated coconut, or chopped nuts. They are great for holidays and are a fabulous addition to any dessert tray – and can be stored in the fridge for 3 weeks!

Description
Sometimes I am just in the mood of chocolaty goodness and these chocolate truffles really hit the spot! You don’t have to pace lots of steps to make these and the best thing about them is that they require few ingredients and no cooking involved.
Ingredients
- 500 g./1 lb. 2 oz. semi-sweet chocolate
- 350 g./12 oz. icing sugar
- 200 g./7 oz. cream cheese
- ½ teaspoon vanilla extract
- Suggested coatings: crushed walnuts crushed pistachios, chocolate vermicelli, or grated coconut
Instructions
- Melt the chocolate in a double boiler or microwave.
- With an electric mixer beat the cream cheese on medium speed until smooth.
- Add the melted chocolate, icing sugar, and vanilla extract. Mix well. Refrigerate for 15 minutes.
- Shape into 2.5cm/1 inch balls.
- Roll in pistachios, walnuts, chocolate vermicelli or coconut. Refrigerate.
- Can be stored in the refrigerator for up to 3 weeks.
