Sometimes I am just in the mood of chocolaty goodness and these chocolate truffles really hit the spot! You don’t have to pace lots of steps to make these and the best thing about them is that they require few ingredients and no cooking involved.
Ingredients
500g./1 lb. 2 oz. semi-sweet chocolate
350g./12 oz. icing sugar
200g./7 oz. cream cheese
½teaspoonvanilla extract
Suggested coatings: crushed walnutscrushed pistachios, chocolate vermicelli, or grated coconut
Instructions
Melt the chocolate in a double boiler or microwave.
With an electric mixer beat the cream cheese on medium speed until smooth.
Add the melted chocolate, icing sugar, and vanilla extract. Mix well. Refrigerate for 15 minutes.
Shape into 2.5cm/1 inch balls.
Roll in pistachios, walnuts, chocolate vermicelli or coconut. Refrigerate.
Can be stored in the refrigerator for up to 3 weeks.
