Fried Banana Balls

Do you need a dessert that can be ready in 20 minutes? There are times where I crave sweets but don’t want to spend hours in the kitchen. The first thing that comes to my mind is this treasured recipe that was handed down to me 20 years ago by a friend of mine. One of my favorite ways to use my over-ripe bananas. These banana balls are crispy on the outside and fluffy on the inside – delicious and easy to put together.

If you are feeding a big crowd, you might need to make a double batch. Simply mash the bananas, mix in the flour, baking powder, and some water. Using a spoon, scoop the batter in the hot oil and deep fry to a golden color. Easy enough, right? Heavenly delicious!!

Ingredients:

7 medium-sized bananas, preferably ripe ones
2 cups flour
1 cup icing sugar(powdered sugar)
3 teaspoons baking powder
4 tablespoons water
4 cups canola or vegetable oil, for deep frying

Directions:

In a bowl mash the bananas.
Add the flour, icing sugar, baking powder, and water, mix well to obtain a thick batter.
Heat the oil in a pan or a wok to an adequate frying temperature.
Using a teaspoon, scoop into balls one at a time and dip, in batches, in the hot oil.
The balls must be fried under medium temperature to ensure complete cooking and even browning.
Remove with a slotted spoon and drain on a paper towel.
Transfer to a serving dish. Enjoy!
