Fall Roasted Sweet Potato Salad with Spinach and Pomegranate

Fall means sweet potatoes, and it’s the perfect time to bring more seasonal, plant-based ingredients to the table. What makes this salad particularly special is the generous mix of honey-roasted pumpkin, sunflower, and chia seeds, which add an irresistible crunch. Everything is brought together with my homemade sweet-and-tangy white balsamic vinaigrette, featuring a little secret technique: reduced white balsamic vinegar that gives the dressing its wonderful depth of flavor!

The Secret to an Amazing Salad Dressing: Reduced White Balsamic Vinegar

Don’t you sometimes wish you could discover the secret behind a salad dressing you once enjoyed at a restaurant? I have quite a collection of restaurant-style salads in my repertoire, developed and perfected over the years. Some have made their way into my cookbook, others are featured on the blog, and a few recipes are still tucked away in my personal collection. Perhaps one day I’ll have my own restaurant! And if I do, this salad dressing will definitely be one of my signature offerings.

There is a little secret behind the wonderful depth of flavor in this dressing, and it comes down to a simple technique: slowly reducing white balsamic vinegar until concentrated. Can you guess what happens? This simple process intensifies the vinegar’s flavor, creating a beautiful balance of sweetness and acidity that takes the dressing to another level. It’s remarkably easy to do, and once you introduce reduced white balsamic vinegar into your cooking repertoire, you’ll understand exactly what I mean!

How to Make White Balsamic Vinegar Reduction Ahead of Time

Pour the entire bottle of white balsamic vinegar into a saucepan and bring it to a boil. Reduce the heat to medium and let it simmer until the vinegar has reduced to about ¾ cup and reaches the consistency of thick maple syrup. Allow it to cool, then transfer it to a clean glass bottle and refrigerate until ready to use.

Make-ahead tip: You can prepare the white balsamic reduction 1–2 weeks in advance and store it in the refrigerator. A little advance planning goes a long way in making meal preparation easier!

How to Roast Sweet Potatoes for Salad

To roast the sweet potatoes: Peel the sweet potatoes and cut them into evenly sized cubes so they cook uniformly. Arrange them in a single layer on a baking sheet. Toss with olive oil, sea salt, and freshly ground black pepper. Roast in a preheated oven at 200°C (400°F) for about 20 minutes, or until fork-tender and lightly caramelized.

Small tip: Avoid overcrowding the baking sheet; the sweet potatoes need enough space to roast properly rather than steam.

How to Make the Honey-Roasted Seed Mix

To make the honey-roasted seed mix: Preheat the oven to 160°C (325°F). In a bowl, combine the honey, olive oil, and sea salt. Add the pumpkin seeds, sunflower seeds, and chia seeds, stirring well until all the seeds are evenly coated with the honey mixture.

Spread the seeds in a single layer on a baking sheet lined with parchment paper. Bake for about 15 minutes, stirring occasionally to ensure even toasting. Remove from the oven and set aside to cool completely. The result is a wonderfully crunchy combination of sweet and salty flavors that will take this salad to the next level!

My tip: Let the seed mixture cool completely before adding it to the salad. This allows it to crisp up beautifully.

How to Make the White Balsamic Salad Dressing

Make the dressing: In a small jar, combine 3 tablespoons of the white balsamic vinegar reduction with the honey, olive oil, sea salt, and freshly ground black pepper. Secure the lid tightly and shake well until everything is thoroughly combined.

The dressing’s beautiful balance of tangy acidity and gentle sweetness pairs especially well with salads featuring fruit or roasted sweet potatoes. Once you discover how easy it is to make such a flavorful homemade dressing, you may never reach for store-bought bottled dressings again!

How to Assemble the Roasted Sweet Potato Salad

To assemble the salad: Arrange the baby spinach around the base of a large, shallow serving bowl. Place the roasted sweet potatoes in the center, then scatter the pomegranate seeds around them. Sprinkle the honey-roasted seed mixture over the salad and finish with crumbled feta cheese.

For a vegan and paleo-friendly version, simply leave out the feta cheese. The salad will still be absolutely delicious!

Drizzle with the dressing as close to serving time as possible to keep the spinach fresh and the salad looking neat and beautiful.

Frequently Asked Questions

Can I use a different leafy green instead of baby spinach?

Absolutely! Arugula and kale are both lovely alternatives to baby spinach. Arugula adds a peppery bite, while kale gives the salad a heartier texture.

Can I use goat cheese instead of feta?

Yes! Goat cheese makes a delicious substitute for feta, adding a creamy texture and a slightly tangy flavor. You can also omit the cheese altogether for a vegan and paleo-friendly salad.

Can I substitute pumpkin for sweet potatoes?

Definitely! Roasted pumpkin cubes make a wonderful alternative to sweet potatoes. They bring a naturally sweet, earthy flavor that pairs beautifully with the pomegranate seeds, crunchy honey-roasted seeds, and white balsamic dressing.
