It may seem a little unusual to share a sweet potato salad in the middle of summer, but here in Congo, where I live, sweet potatoes are available all year round! Honestly, this Couscous Salad with Roasted Sweet Potatoes and Fried Dates deserves a place on your summer table, too. Featuring fluffy couscous, tender roasted sweet potatoes, and deliciously caramelized fried dates, it makes a colorful and satisfying addition to summer barbecues, outdoor gatherings, dinner parties, and festive occasions. It’s a wonderful way to bring something a little different and unexpected to the table!

How to Make the Salad

Step 1: Roast the Sweet Potatoes

Peel the sweet potatoes and cut them into evenly sized cubes to ensure they roast uniformly. Arrange them on a baking sheet, add the onions, and drizzle with 2 tablespoons of olive oil. Season with salt and freshly ground black pepper, then toss everything to coat evenly. Roast in a preheated oven for about 20 minutes, or until the sweet potatoes are tender when pierced with a fork and lightly caramelized around the edges.

Step 2: Cook the Couscous

Cooking couscous is incredibly easy! Bring the water to a boil, then add the salt, butter, and couscous. Cover the pot, reduce the heat to very low, and let it simmer for about 10 minutes, or until the couscous has absorbed all the water and is tender. Remove from the heat and fluff the couscous gently with a fork to separate the grains. Set aside and allow it to cool completely before assembling the salad.

Step 3: Prepare the Dressing

The dressing takes just a few minutes to prepare. Simply combine the olive oil, pomegranate molasses, mustard, salt, and freshly ground black pepper. Blend everything with an immersion blender until smooth and well emulsified. The couscous will soak up all those wonderful flavors, creating a delicious balance of tangy, savory, and sweet notes. You’ll love how beautifully the dressing brings all the ingredients together!

Step 4: Fry and Caramelize the Dates

Pull open the dates, remove the pits, and set them aside. Heat the olive oil in a skillet over medium heat. Add the pitted dates and fry briefly, turning them on both sides to lightly caramelize the exterior. This happens very quickly, sometimes in just a few seconds, so keep a close eye on them to prevent burning. You simply want to give the dates a lightly caramelized coating without cooking them for too long. Sprinkle with a pinch of salt, remove from the skillet, and set aside to cool completely. Once cooled, roughly chop the dates and set aside until ready to assemble the salad.

Step 5: Assemble and Serve the Couscous Salad

In a large serving bowl, combine the cooled couscous, roasted sweet potatoes, raisins, fried dates, and orange slices. Pour the dressing over the salad and toss gently until everything is evenly coated and the flavors are beautifully combined. Taste and adjust the salt to your liking. Finish with a generous sprinkle of toasted pistachios for a lovely nutty crunch.

Serve this colorful couscous salad as a satisfying main dish or as a delicious side alongside grilled meats, chicken, or your favorite barbecue goodies! Either way, it’s an absolute treat!

Instructions

Roast the Veggies & Pistachios

  • Prep the oven: Preheat your oven to 200°C / 400°F.
  • Roast the sweet potatoes and onions: Toss the cubed sweet potatoes and quartered onions with 2 tablespoons of olive oil, salt, and black pepper on a baking sheet. Roast for about 20 minutes, or until fork-tender.

  • Season: Sprinkle with a pinch of salt and set aside to cool completely.

Blend the Dressing

  • Emulsify: In a small bowl or jar, combine the pomegranate molasses, olive oil, Dijon mustard, salt, and black pepper. Blend with an immersion blender until the dressing is completely smooth and emulsified.

Assemble & Serve
