It captures the exact essence of authentic kibbeh—minus the meat!
Since avocados are among the highest-fat plant foods available, they make a brilliantly logical substitute for raw meat. Of course, it won’t taste identical to beef or lamb, but the aromatic spices and fine bulgur wheat instantly transport you to that familiar, comforting kibbeh sensation. Using avocado puree in this way is a genius alternative to raw meat kibbeh (Kibbeh Nayeh). Not only is it an incredibly versatile, plant-based option, but it is also highly nutrient-dense—packed with heart-healthy fats, rich in dietary fiber, and containing even more potassium than a banana. You are truly in for a treat!

Ingredients Needed to Make Avocado Kibbeh
- Avocados: Select ripe but firm avocados. They provide the creamy, rich base essential for replacing the traditional raw meat.
- Fine Bulgur: Fine brown or white bulgur wheat is an absolute must-have ingredient in all authentic kibbeh recipes.
- Kibbeh Spice Mix: This aromatic blend takes your dish from average to extraordinary. You can easily buy it at Middle Eastern grocery stores or make your own using the homemade recipe provided in the notes section at the bottom of the page.
- Salt: Essential to enhance and balance the creamy undertones of the avocado.
- Extra Virgin Olive Oil: Use the highest quality olive oil you can find to drizzle over the top for a rich, traditional Mediterranean finish.
- Fresh Herbs (Parsley & Basil): A few sprigs of fresh parsley and sweet basil leaves add a vibrant, peppery brightness to the bulgur mixture.
- Onions: One small onion is kneaded directly into the avocado-bulgur mixture, while another is sliced for a beautiful, crunchy plate decoration.
- Cherry Tomatoes: Used as a juicy, sweet garnish that beautifully complements the rich textures.
- Habanero Peppers: An optional ingredient, but highly recommended if you want to add a bold, fiery kick to your vegan kibbeh.

Why You Should Pair Tomatoes with Avocado Kibbeh
Avocados and tomatoes are a match made in culinary heaven. Culturally and flavor-wise, they represent an endlessly satisfying combination—the creamy mellowness of ripe avocados plays beautifully with the zingy, juicy bite of fresh tomatoes. Beyond the incredible taste, pairing them together significantly enhances nutrient absorption. The secret lies in lycopene, a powerful antioxidant found in tomatoes that helps fight signs of aging and protects your skin. Since lycopene is fat-soluble, the heart-healthy fats naturally present in avocados allow your body to absorb it much more efficiently, maximizing the health benefits of this vibrant duo.

Avocado Kibbeh
Description
Equipment
- 1 Food Processor
Ingredients
- 3 large avocados 500 grams each, total of 1500 grams / 53 oz
- 1 cup fine bulgur
- ½ cup water for hydrating the bulgur
- 1 or 2 red Habaneros crushed (optional, but highly recommended)
- Salt to taste
- Extra-virgin olive oil for mixing and drizzling
- For the Kamouneh The Flavor Enhancer
- 4 tablespoons fine bulgur
- 1 medium onion chopped
- 1½ tablespoons kibbeh spice see note below
- 1 sprig of fresh parsley
- A few fresh basil leaves
Instructions
- Soak the fine bulgur in water and stir well with your hands to combine. Set aside for 20 minutes, then knead with your hands for a few minutes until the bulgur grains have completely softened.
- Now let’s make the kamouneh (the main flavor enhancer): In a food processor, combine 4 tablespoons of fine bulgur and 1½ tablespoons of kibbeh spice (see the notes section below). Grind well, then add the parsley sprig, basil leaves, and chopped onion. Pulse a few more times until you get a completely smooth paste.
- Add the kamouneh to the hydrated bulgur and mix well until thoroughly combined.
- Cut the avocados in half and remove the pits. Purée them in a food processor for a smoother consistency, or mash them by hand for a more rustic texture.
- Add the soaked bulgur, season with salt, and drizzle generously with olive oil. Mix well to combine and allow the flavors to meld.
- Add the crushed habaneros, if desired. They’re optional but highly recommended. Mix well once more, then transfer the avocado kibbeh to a serving plate.
- Halve the cherry tomatoes and arrange them over the avocado kibbeh.
- Garnish the edges of the plate with onion wedges, and add an extra drizzle of olive oil and a few more chili flakes, if desired. Serve immediately with pita bread or Lebanese bread. Enjoy!
- If you’re not serving it immediately, cover the dish with plastic wrap, pressing it directly against the surface of the avocado kibbeh to create an airtight seal and help prevent oxidation.
