Goat Cheese and Apple Tart
A savory tart made with a crispy crust and a filling of goat cheese, heavy cream, and eggs, topped with apple slices and dried thyme and drizzled with honey upon serving. I love to serve this for breakfast or brunch, but can be served anytime as well. Your kitchen will be filled with wonderful aromas while the tart is in the oven. Serve warm!

Description
A savory tart made with a crispy crust and a filling of goat cheese, heavy cream, and eggs, topped with apple slices and dried thyme and drizzled with honey upon serving.
Ingredients
For the dough:
- 2 cups flour
- ¾ cup / 11/2 sticks butter chilled
- 1 egg yolk
- A pinch of salt
- 4 tablespoons chilled water
- A drop of white vinegar
For the filling:
- 300 g. /10.5 oz.goat cheese the spreadable type
- ½ teaspoon salt
- 1 cup heavy cream
- 3 eggs
- A drop of white vinegar
For the topping:
- 2 apples Granny Smith is a good choice, peeled, cored and thinly sliced
- A dash of dried thyme
- Honey upon serving
Instructions
For the dough:
- Preheat the oven to 180°C/350°F.
- Mix the flour and salt.
- Cut the butter into small pieces and add it to the flour.
- Mix thoroughly integrating the butter.
- Add the egg yolk and mix.
- Add the cold water and vinegar. Mix well.
- When the mixture starts coming together, knead it lightly.
- Grease a round 30 cm/12 inches tart tin. Roll out the dough over a floured surface, using a rolling pin, and carefully line the tart tin. Secure the dough around the corners of the tin and prick the dough with the tines of a fork.
- Bake the crust for about 10-12 minutes, or until the crust slightly changes color. Remove from the oven and set aside to cool down.
For the filling:
- In a bowl, combine the heavy cream, eggs, salt and vinegar.
- Add the goat cheese and whisk well integrating the mixture.
- When the crust has totally cooled down, evenly spread the goat cheese mixture over the crust.
- Bake for about 7 minutes, allowing the filling to firm up.
- Remove from the oven, and evenly distribute the apple slices on top of the tart and sprinkle a dash of dried thyme on top.
- Bake for about 25 minutes until the apples are lightly golden and the top is puffed.
- Remove from the oven, drizzle some honey on individual slices when serving. Serve warm. Enjoy!
