Description

These gorgeous potatoes make an elegant side dish or a meal in itself.

Ingredients
 

  • 4 large potatoes
  • ½ cup heavy cream
  • Salt to taste
  • A dash of freshly grated black pepper
  • A dash of freshly grated nutmeg
  • ¾ cup green onions finely chopped
  • ¾ cup grated Swiss cheese or cheddar cheese
  • 8-10 medium-sized shrimp peeled and deveined
  • 1 teaspoon butter

Instructions
 

  • Rinse the potatoes and pat dry. Prick the potatoes with a fork on the sides.
  • Preheat the oven to 180°C/350°F, and place a rack in the center.
  • Wrap each potato with foil, place on an oven sheet, and bake for 1 hour.
  • Remove the potatoes from the oven and allow to cool down until you can handle them.
  • Slice each potato in half, and scoop out the top of each potato half, leaving some of the flesh attached to the skin.
  • Add the scooped potato to a bowl and mash well with a potato masher.
  • Heat the cream and pour it over the mashed potatoes.
  • Add salt, nutmeg, black pepper, and half of the grated cheese.
  • Place the butter in a skillet over medium heat, add the shrimp and sauté for 3 minutes or until the shrimp turn opaque. Add to the mashed potato and mix well.
  • Spoon the mashed potato mixture back in each potato skin.
  • Sprinkle evenly the rest of cheese on top.
  • Return the stuffed potatoes to the oven on the baking sheet, and broil just to melt the cheese on top and slightly changing its color. Enjoy!
