What Are Iraqi Kleicha? Traditional Date-Filled Cookies

Kleicha are traditional Iraqi cookies made with a tender, crispy dough and a sweet date filling. For this version, two layers of dough are sandwiched around a generous layer of date paste, then rolled into a log. When sliced, the cookies reveal a beautiful pinwheel-like pattern. Don’t worry if yours aren’t perfectly shaped, though! Their rustic appearance is part of their charm.

How a Family Trip Inspired This Traditional Iraqi Kleicha Recipe

Every time I roll out a batch of traditional Iraqi Kleicha, my mind instantly drifts back to our unforgettable first family trip to Canada. My husband Ramzi and I flew into Montreal to visit our children, who proudly stepped into the roles of personal tour guides to show us around their vibrant city. We marveled at Montreal’s charming European-style architecture, historic cathedrals, and an incredible array of diverse, world-class restaurants.

From there, we traveled to Toronto for a modern metropolitan contrast of soaring high-rise buildings, even squeezing in a breathtaking trip to see a partially frozen, snow-white Niagara Falls. But out of all those spectacular sights, the true highlight of our Canadian vacation happened around a crowded dinner table.

The Ultimate Middle Eastern Dessert Surprise

Our trip turned into an impromptu journey of culinary inspiration during an unforgettable dinner at my sister Susan’s home in Toronto. Susan welcomes people with her whole heart, and she laid out a magnificent feast of traditional Lebanese delicacies—comforting split lentil soup, fresh tabbouleh, stuffed grape leaves, zucchini, baked vegetarian omelette (ejje), frakeh, malsa, and perfectly roasted chicken drumsticks.
But the real magic happened when it was time for dessert. Susan stepped out of the kitchen holding a huge, warm batch of homemade Iraqi Kleicha (also frequently spelled klaicha).
The texture was absolutely phenomenal. The shortbread-style cookie dough was perfectly tender and crispy on the outside, giving way to a rich, soft date filling that was beautifully scented with warm ground cardamom. Susan confessed that she had spent years testing and tasting countless variations to find the absolute best Middle Eastern date cookie, and this specific recipe was her crown jewel. The moment I took my first bite, it became my absolute favorite, too.
A Recipe Worth Sharing (and Indulging In!)
Before we said our goodbyes, Susan lovingly packed a fresh tin of these cardamom date cookies for me to take back to the hotel. I must confess, I ended up eating the entire batch all by myself! It certainly wasn’t the best choice for my diet, but a vacation is the perfect excuse to indulge in comforting Eid cookies.
Throughout the rest of our trip, we were blessed to be invited into the homes of Ramzi’s family members, where his brothers, sisters, and nephews proved to be equally phenomenal cooks. Those rare, precious moments together with family meant everything to me. And as for Susan’s magnificent Iraqi date cookies? Let’s just say that not a single sweet morsel went to waste!

Frequently Asked Questions About Kleicha Cookies

What is Kleicha?

Kleicha is a traditional spiced cookie that serves as a staple holiday treat in Iraqi households, especially around Eid. It features crispy, flaky dough sandwiched liberally with a rich date paste, rolled into a log, and sliced to reveal a beautiful pinwheel pattern. While they require a bit of time to assemble, their rustic look and zesty flavor make them a spectacular addition to any holiday dessert platter.

What type of dates are best to use for Kleicha?

The best choices are fleshy, soft, and moist varieties such as Omani, Khudri, or Medjool dates. You should completely avoid dry date varieties, as the filling needs to be transformed into a perfectly smooth, pliable, and soft date paste.

The Secret to Making the Flakiest Iraqi Kleicha Dough

Beyond the fragrant, aromatic date filling, the dough achieves an incredibly crispy and flaky shortbread texture. This specific recipe holds a special place in our family narrative; it was handed down by my sister Susan, who perfected it after testing countless variations. It quickly became her absolute favorite, and it is mine too!

How do you make a vegan Kleicha?

Most of the traditional ingredients are naturally plant-based, except for the butter in the filling and the egg wash used for browning. To create a fully vegan version, substitute the butter with a neutral cooking oil like sunflower or canola oil. For a beautiful golden finish without eggs, whisk together 2 tablespoons of almond milk with 1 tablespoon of maple syrup and brush it over the discs right before baking.

How should Kleicha cookies be stored?

Always allow your baked cookies to cool completely before packing them away. Store them at room temperature in a tightly sealed, air-tight container, and they will stay fresh and delicious for 2 weeks. To significantly prolong their shelf life, wrap them tightly in cling film and keep them in the freezer. They are the ultimate make-ahead holiday treats!

How is Kleicha served during Eid in Iraq, similar to Maamoul?

Just like Maamoul is an indispensable holiday treat in Lebanese homes, Kleicha is the ultimate staple dessert in Iraqi households during Eid. Both are traditional, meticulously shaped holiday pastries centered around rich date fillings. Serving Kleicha alongside a hot cup of black tea is a beautiful way to welcome guests during holiday celebrations, making them a refreshing and celebratory addition to your holiday buffet platter.

Ingredients

For the Dough

  • 4 cups all-purpose flour
  • 1 cup sunflower oil
  • 1 tablespoon granulated sugar
  • ½ teaspoon ground cardamom
  • A pinch of salt
  • ¾ cup lukewarm water
  • ¼ cup sesame seeds
  • 1 egg lightly beaten with a drop of vinegar, for brushing the dough before baking (for a vegan option, combine non-dairy milk with maple syrup for brushing)

To Proof the Yeast

  • 1 tablespoon active dry yeast
  • 6 tablespoons lukewarm water
  • 1 teaspoon granulated sugar

For the Filling

  • 1 kg 2 lb 4 oz dates
  • 4 tablespoons softened butter or sunflower oil for a vegan option
  • 1 teaspoon ground cardamom

Instructions

  • To Proof the Yeast: In a small bowl, dissolve the yeast in the lukewarm water and sugar. Let it stand for 10–15 minutes, until a bubbly foam forms on the surface. This indicates that the yeast is active and ready to use.

To make the dough:

  • In a large ceramic or glass bowl, combine the flour, salt, and ground cardamom. Mix with your hands until evenly combined.
