Pancakes
Soft, delicious, and simple to make! These pancakes are made of a cream cheese batter – perfect for brunch!
Ingredients:
2 cups flour
3 tablespoons sugar
2 tablespoons baking powder
A pinch of salt
½ teaspoon baking soda
½ cup milk
200 g./7 oz. cream cheese
3 eggs, lightly beaten
3 tablespoons canola oil
For the chocolate sauce:
200 g./7 oz. semi-sweet chocolate
1 cup heavy cream
1 tablespoon sugar
1 teaspoon butter
Directions:
To prepare the chocolate sauce:
Place the heavy cream over medium heat, bringing it to a boil. Once it boils, remove from the heat and add the chocolate, sugar and butter. Whisk to obtain a homogenous shiny glaze. Set aside.
In a large bowl, mix the flour, sugar, baking powder, baking soda, and salt.
Add the cream cheese, eggs, and milk. Whisk just to incorporate.
Heat a skillet or griddle over medium heat; brush lightly with canola oil.
Pour the batter by measuring ¼ cup onto the skillet or griddle, making a few pancakes at a time.
Allow it to cook for about 1 to 2 minutes. The bottom should be golden.
Flip it over and cook on the other side until golden. Transfer to a rack.
Serve with the chocolate sauce.
