Dried Cranberry Scones with Chocolate Glaze
I enjoy these scones with my morning tea. They are flaky and melt in your mouth, but beware – they are highly addictive!
Ingredients:
For the dough:
4 cups flour
½ cup sugar
4 teaspoons baking powder
¾ teaspoon salt
2 ¾ cups heavy cream
1 cup dried cranberries
For the chocolate glaze:
200 g./7 oz. semi-sweet chocolate
1 teaspoon butter
2 tablespoons milk
Preheat the oven to 200°C/400°F. Place a rack in the center of the oven.
In a large bowl, combine the flour, sugar, baking powder, salt, and dried cranberries.
Add the heavy cream and stir with a wooden spoon to fully incorporate.
Knead the dough with your hands until it becomes smooth.
Lightly sprinkle some flour on a counter top and pat the dough into a rectangle about 2.5cm/1 inch thick.
With a knife or a pizza wheel, cut into 7.5cm/3 inch-squares. Cut each square into 2 triangles.
Place the scones on lined baking sheets, about 2.5cm/1 inch apart.
Bake about 15 minutes, or until tops and bottoms are golden brown.
Remove from the oven and set aside.
For the chocolate glaze, melt the chocolate in a double boiler or a microwave. Add the butter and milk and stir, obtaining a shiny glaze.
Place the chocolate glaze in a piping bag or a squeeze bottle. Drizzle the melted chocolate over the scones.
