Apple Pie Cake
A cross between an apple pie and a cake. This is a perfect choice for me, since I love both apple cakes and pies, and I could not decide which one I wanted. I ended up with this gorgeous delicious apple pie cake. Serve it with a scoop of ice cream or a dollop of whipped cream.
Ingredients:
For the cake batter:
2 cups flour
5 eggs
1 cup sugar
1 cup oil
1 ½ tablespoons baking powder
½ teaspoon baking soda
½ tablespoon vanilla extract
2 green apples, peeled, cored, and cubed
½ teaspoon cinnamon powder
For the top:
2 large green apples, peeled, cored, and cubed
⅓ cup sugar
½ cup raisins
⅓ cup pine nuts
½ teaspoon cinnamon powder
1 teaspoon butter, softened
1 tablespoon lemon juice
1 tablespoon flour
Directions:
For the top:
Add the diced apples, sugar, cinnamon powder, raisins, lemon juice, pine nuts, flour, and butter in a bowl. Mix well and set aside for 30 minutes.
In the meantime prepare the cake batter:
Preheat the oven to 200°C/400°F.
Prepare a 30cm/12 inch round deep spring form pan. Cover the bottom and edges with a heavy duty foil, then grease and flour both bottom and edges as well.
In a bowl, sift the flour, baking soda, and baking powder.
In another bowl, whisk together the oil and sugar. Add the eggs, one at a time, and whisk to incorporate. Add the vanilla and chopped apples.
Gently fold in the flour mixture incorporating the batter.
Spoon the batter into the spring form pan, filling 2/3 of it (the cake will rise while baking)
Spread the topping ingredients on top of the cake batter, evenly covering it.
Bake in an oven for 50-55 minutes, or until you insert a toothpick in the center of the cake and it comes out clean and the top turns golden in color.
Note: If the cake's surface gets too dark while baking, loosely cover it with foil.
