Description

Salatet Zaatar Akhdar (Lebanese Wild Oregano Salad) pairs beautifully with almost anything! I love enjoying it as a light lunch with warm pita bread, but it is especially delicious served alongside bulgur mujadara, mujadara hamra, roast leg of lamb, grilled lamb kebabs, shish tawook, tomato bulgur pilaf, chicken bulgur pilaf, grilled steak, or fried eggs. Honestly, this fresh, lemony herb salad complements so many dishes, so feel free to serve it with whatever your heart desires!

Ingredients

  • 4 bunches of zaatar akhdar wild oregano, about 400 g (14 oz) with stems, yielding approximately 4 cups of destemmed leaves
  • 1 large onion finely chopped
  • 1½ teaspoons sumac
  • ¼ cup freshly squeezed lemon juice
  • ⅓ cup extra virgin olive oil
  • Salt to taste

Instructions

  • Remove the wild oregano leaves from the stems and wash them thoroughly, rinsing several times to remove any dirt. Gently squeeze the leaves between your palms to remove excess water, then transfer them to a bowl.
  • Add the chopped onion, sumac, lemon juice, and olive oil. Season with salt to taste and toss everything together.
  • Serve with warm pita bread or enjoy it alongside any dish your heart desires!
