Description

Do you need an easy-to-make dessert that keeps for 1 week? A stack of Medjool dates layered with tahini, nuts and a sprinkle of unwseetened coconut, together they create an unexpected favored combination, it is handy to keep around for a few days in the fridge, cut a slice and enjoy a crumbled piece that falls on your lap when you eat it, keep it for those days when you want a quick healthy dessert with no refined sugar or flour to go with your morning coffee or afternoon tea.

Ingredients
 

  • 1 kg/ 2 lb 4 oz Medjool dates
  • 1/2 cup walnuts
  • 1/2 cup almonds
  • 1/2 cup cashew nuts
  • 1/2 cup raw shelled pistachios
  • 1 cup tahini
  • 3 tablespoons unsweetened desiccated coconut

Instructions
 

  • Pull open the dates lengthwise and remove the pits.
  • Toast the nuts: Heat a dry skillet over medium high heat, add the nuts each separately in a single layer and stir constantly for 2 to 3 minutes until fragrant and considerably toasted, remove from skillet and leave to cool down completely.

  • Using a serrated knife, roughly chop the nuts.
  • Prepare a pan and all you do is layer half of your medjool dates over a sheet pan, create an open butterfly shape with the dates and lay them in the pan so they lie adjacent to one another in a single layer, press them using your hands then drench them in tahini, and toss with a layer of toasted nuts followed by a sprinkle of desiccated coconut; repeat the process in 1 more time, resulting in 2 layered dessert. Exert pressure on the surface of the date pan. Refrigerate overnight covered with clingfilm.
  • Please don't cut directly, otherwise it will crumble. Refrigerate overnight then cut the desired slices and keep the rest refrigerated covered with clingfilm. This is a rich and filling dessert, so please don't be tempted to cut overly generous servings; it would be a crime to see it left on the plate.
  • Storage: Keep in the fridge for 7 days.
