Nothing is more comforting than coming home to the irresistible aroma of oven-roasted chicken and potatoes. This easy sheet pan chicken recipe combines juicy, flavorful roasted chicken with golden, crispy potatoes, all seasoned with rich aromatic spices and roasted together on one pan.
Perfect for a simple weeknight dinner or a cozy family meal, this oven-roasted chicken and potato tray is easy to prepare, requires minimal cleanup, and delivers deliciously crispy, golden results every time. It has been a favorite in our home for as long as I can remember—and I’m sure it will become a favorite in yours, too!

The roasted chicken and potato bake gets its bold flavor from a blend of spices: paprika, ginger, garlic, cumin, cardamom, cilantro, turmeric, white pepper, and black peppercorns. These are whisked together with yogurt, olive oil, and tomato paste to create a vibrant orange marinade that gives the chicken a sensational depth of flavor. As it bakes, the potatoes soak up some of the rendered chicken fat, imparting even more richness and flavor. Everything emerges evenly crisp on the outside and tender on the inside.

I’ve tested this spice blend using the spices below, and the result is absolutely delicious. That said, feel free to adjust the seasoning to suit your taste. You can add more of your favorite spices or leave out any spice you’re not a fan of.

Why You’ll Love This Oven-Roasted Chicken
-
Juicy and tender chicken: The chicken stays wonderfully juicy and tender on the inside while roasting to perfectly crispy, golden skin on the outside.
-
Flavorful seasoning: A delicious blend of seasonings gives the chicken incredible flavor, and you can easily adjust the amount to suit your taste.
-
Crispy, flavorful potatoes: The potatoes roast alongside the chicken, soaking up some of the flavorful rendered chicken fat. This gives them an irresistible richness while helping them become golden and crispy on the outside and tender on the inside.
-
Perfectly crispy skin: The golden-brown, crispy chicken skin is one of the best parts of this easy oven-roasted chicken recipe.
-
Delicious pan drippings: Serve the chicken and potatoes with crusty bread to soak up all those rich, savory drippings left behind in the roasting pan. They’re simply irresistible!

How to Keep Oven-Roasted Chicken Moist and Juicy
The key to keeping oven-roasted chicken moist, tender, and juicy is using a good marinade and cooking the chicken slowly at a low temperature. Yogurt is an excellent tenderizer because its lactic acid and calcium help break down some of the proteins in the chicken, resulting in more tender meat.
Another important factor is slow, low-temperature baking. Cooking the chicken gently gives the connective tissues time to soften, helping the meat become tender enough to easily fall off the bone.
To retain moisture during baking, cover the chicken first with parchment paper, then add a layer of aluminum foil. This creates a protective seal that helps prevent moisture from evaporating as the chicken cooks.
The parchment paper also acts as a non-stick barrier between the chicken and the foil, while the aluminum foil helps lock in moisture and protect the chicken from direct heat. Together, these simple techniques help produce oven-roasted chicken that is juicy, tender, and flavorful.

Can I Use Chicken Thighs Instead of Chicken Breasts?
Yes, absolutely! You can use chicken thighs instead of chicken breasts in this recipe. I used chicken pieces from two whole chickens because my family is divided—some prefer juicy chicken thighs, while others prefer chicken breast.
Feel free to use chicken thighs, chicken breasts, chicken wings, or two whole chickens cut into pieces, just as I have used here. You can mix and match the chicken cuts based on your family’s preferences.
Can I Use Boneless Chicken Pieces?
For the best flavor and texture, bone-in chicken is highly recommended. Chicken pieces with the bone and skin tend to stay more moist and flavorful, especially when using a slow-cooking method.
While you can use boneless chicken, keep in mind that it may cook more quickly and can be less juicy than bone-in chicken.

An Easy Roasted Chicken and Potatoes Recipe
This roasted chicken and potatoes recipe is easy to make, but it does require a little time for the chicken to marinate.
For the best flavor, marinate the chicken in the morning or the night before. Once it’s ready, you can simply roast everything together and have a delicious, comforting meal on the table with minimal effort. The extra marinating time is well worth it!
What to Serve with Roasted Chicken and Potatoes?
The perfect companion to roasted chicken is Lebanese garlic sauce (toum). Its creamy, garlicky flavor pairs beautifully with the juicy roasted chicken and crispy potatoes.
For a complete Lebanese-inspired meal, serve your roasted chicken and potatoes with fattoush, tabbouleh, or a fresh Middle Eastern salad. And, of course, don’t forget the Lebanese pickles! Their tangy, crunchy flavor adds the perfect finishing touch to the meal.

Turn Leftover Chicken Into Delicious Sandwiches
Transform your leftover baked chicken into delicious leftover chicken sandwiches by shredding the chicken into smaller pieces.
To assemble the sandwiches, generously spread Lebanese garlic sauce (toum) over Arabic bread or pita bread. Add the shredded chicken, roasted potatoes, and pickles, then fold the bread closed. For an extra-crispy finish, toast the sandwich in a panini press until golden and warm to create a delicious grilled chicken sandwich.
Storage
Store leftover chicken, potatoes, and other components in an airtight container in the refrigerator for up to 3 days.

Oven Roasted Chicken and Potatoes
Description
Equipment
- 1 large baking sheet
Ingredients
- 2 whole chickens each weighing 1,200 g (2.6 lb)
- 1½ kg 2 lb 4 oz potatoes — Yukon Gold potatoes are perfect for baking
- ⅔ cup yogurt
- 1 tablespoon tomato paste
- ⅔ cup olive oil
- 8 garlic cloves adjusted to your liking (we are garlic lovers!)
- ½ tablespoon paprika
- ½ teaspoon ground ginger
- ¼ teaspoon ground cardamom
- ½ teaspoon white pepper
- ½ teaspoon black peppercorns
- 1 teaspoon ground cumin
- ¼ teaspoon ground turmeric
- ½ tablespoon garlic powder
- ½ teaspoon ground coriander
- 1½ tablespoons salt or to taste
Instructions
- Crush the black peppercorns.
- Cut each chicken into 4 pieces, for a total of 8 pieces. Make 2 shallow slits in each piece of chicken.
- In a bowl, add the spices: crushed black peppercorns, paprika, ginger powder, cardamom powder, white pepper, cumin powder, turmeric powder, garlic powder, cilantro powder, and salt. Add the yogurt, olive oil, tomato paste, and crushed garlic, then whisk until you obtain a thick orange sauce.
- Pour the mixture over the chicken and massage the pieces until evenly coated. Cover and refrigerate for 4 hours or overnight.
- Peel and slice the potatoes into thick slices, about 1½ inches thick. Mix the potatoes with the chicken pieces.
- Preheat the oven to 200°C/400°F.
- Choose a large baking dish that is large enough to fit the chicken and potato slices. Arrange the potato slices evenly in the baking dish, then place the chicken pieces on top of the potatoes.
- Cover with parchment paper first, then add a layer of aluminum foil. The parchment paper acts as a non-stick layer, while the foil helps retain moisture and protects the food from direct heat.
- Place the roasting rack with the chicken and potatoes directly on the middle oven rack and bake for 1 hour.
- Remove the parchment paper and foil, then return the chicken tray to the oven and cook for a further 15 minutes, or until the chicken and potatoes are cooked through and have a desirable golden-brown color. Serve with Lebanese garlic toum and pickles.
