Looking for a delicious zucchini side dish with few ingredients and simple cooking? In Lebanon, we prepare zucchini in a variety of ways.
Ingredients
1kg/2lb. 4 oz. zucchiniI used baby zucchini
1large red onionfinely chopped
6medium-sized tomatoesdiced (no need to peel)
4tablespoonscanola oil
A dash of freshly grated black pepper
A dash of chili flakes
Salt to taste
Instructions
Set a pot over medium heat, add the oil and onion and sauté to transparent.
Add the zucchini and chili flakes. Stir for one minute.
Reduce heat to low, cover the pot and simmer for 7 minutes.
Stir the zucchini every 2 minutes to avoid any sticking to the bottom of the pot and burning.
Add the diced tomatoes, salt and black pepper. Cover and let it simmer over low heat about 15 minutes. Serve it with pita bread.
