I love those cookies for two reasons, one because pistachios are infused in the dough, and two, they are topped with chocolate and walnuts that makes them wonderfully unique! Seriously amazing
Ingredients
4cupsall purpose flour
1cupicing sugarpowdered sugar
4sticks/2 cups butter500g
1cupground pistachios
½teaspoonvanilla extract
For the topping:
200g./7 oz. milk chocolate
¾cupwalnut halves
Instructions
Preheat the oven to 200°C/400°F.
In a large bowl, add the flour, icing sugar, ground pistachios, and vanilla.
Melt the butter over low heat and add to the flour mixture. Rub the mixture together and knead together obtaining a butter dough.
Place the dough in a large plastic bag and flatten with a rolling pin to a thickness of 1.5cm/about 0.5inch.
Open the plastic bag and cut the dough into circles using a cutter. Transfer the cookies to a parchment-lined cookie sheet.
Bake until the cookies turn pale golden.
Remove from the oven and set aside to cool down.
Melt the chocolate in a microwave or a double boiler and almost cover the top of the cookies with the chocolate.
