These make a great afternoon tea snack or even a lunch box treat
Ingredients
4cupsflour
1cupicing sugarpowdered sugar
4sticks or 2 cups butterabout 500g.
½teaspoonvanilla extract
For the filling:
¾cupNutella
Instructions
Using a teaspoon, scoop out Nutella and place in small drops on a cookie sheet lined with parchment paper. Freeze the Nutella drops for 1 hour to firm up and solidify. (This will make it easier for you to stuff the cookies with Nutella later)
Preheat the oven to 200°C/400°F.
To prepare the dough: In a large bowl add the flour, icing sugar and vanilla extract.
Melt the butter over low heat and add to the flour mixture. Rub the mixture together and knead together obtaining a butter dough.
Break the butter dough into equal balls, roughly the size of an egg.
Putting it together:
Hollow out the center of each ball using your index finger and fill the hole with a Nutella drop. Seal the dough patching it together and roll each into a ball.
Flatten each dough between the palms of your hands to a thickness of 1cm/ about ½ inch.
Using a cup or a cookie cutter, recut each flattened dough (for better looking cookies) and place on a cookie sheet lined with parchment paper, making sure to leave some space between one cookie and another.
Bake the cookies for 12-15 minutes until the cookies turn pale golden. Remove from the oven and set aside to cool down Transfer to a serving dish. Enjoy!
