This wonderful fried halloumi cheese works really well with mixed green lettuce, cherry tomatoes, black olives, and a dressing based on a reduction of balsamic vinegar and extra virgin olive oil.
Ingredients
150g./5.2 oz. halloumi cheese
2tablespoonsflour
1tablespoonbutter
4cupsmixed salad green
5cherry tomatoeshalved
2tablespoonscanola oil
1tablespoonbutter
For the dressing:
¼cupa reduction of balsamic vinegar
¼cupextra virgin olive oil
Instructions
Pat the cheese dry with a paper towel.
Slice the cheese about 1 cm/½ inch thick.
Dredge each slice of halloumi in the flour and coat on both sides.
Heat oil and butter in a saucepan over medium heat. Add the halloumi and cook until golden brown on both sides.
Spoon the green mix, black olives, and cherry tomatoes over a serving plate.
Top with fried halloumi. Drizzle the balsamic vinegar reduction and olive oil on top. Serve immediately.
Halloumi grills easily but it needs to be eaten quickly.
