Description

The date cookie log is made by layering and rolling a date paste and plain cookies together, then slicing and serving. It is scrumptious and wonderfully eye-catching, and the best part is that no baking is involved.

Ingredients
 

  • 1200 g /2.6 lb plain rectangle cookies/ biscuits in some countries they cal l them biscuits
  • 1 Kg Medjool dates or any soft variety
  • 100 g / 3.5 oz butter melted over low heat
  • 1 cup full cream milk powder optional, but recommended
  • 2 tablespoons orange blossom water or rose water
  • 1 teaspoon cardamom powder
  • 1/2 teaspoon mastic gum, optional
  • White sesame seeds or your favorite crushed nuts like pistachios or walnuts

Instructions
 

Brown your Milk Powder:

  • Now this step is optional but highly recommended. Browned milk powder refers to milk powder that has been toasted until it turns a golden beige color. It is toasted on the stovetop over low heat to prevent it from burning; it provides the dates with a deep rich nutty flavor. To make it: Pour the full cream milk powder over a saucepan and place it over low heat. Keep on stirring all the time until you have a golden powder, it takes about 10 minutes.

Date Paste:

  • Use Medjool dates or any wet type, pull open the dates and release the pits by hand, transfer the dates to a food processor and add the melted butter, cardamom powder and mastic gum, if used, blend to get a paste. Stir in the browned milk powder, and process one more time to homogenize everything together.

To put together:

  • Roll the date filling between two sheets of parchment paper, roll out to a 10×15-inch / 25x 38 cm rectangle; it should be thin. Cut the rolled date to a uniform rectangle. Trim the excess dough and set aside. (It would be a crime to throw away those trimmed pieces, mix them later with some plain cookies and create bite sized balls) Remove the top piece of parchment.
  • Place the plain cookies, one piece at a time adjacent to one another over the rolled date rectangle along the side near you until you reach the end, creating a horizontal log. Using the parchment paper under the date, lift it up and roll it over the lined cookies, until the cookies are completely covered and the date seals it in and looks like a thick log, put another layer of cookies on top of the log, and one more time lift the parchment paper under the date and roll it over the lined cookies.

  • Continue rolling and adding cookies until the date rectangle has been folded over the cookies. Watch the detailed video tutorial to make it easier for you to understand. Spread the sesame seeds on a countertop and dip the date log onto the sesame seeds, allowing them to stick to the date log, refrigerate for a minimum of 1 hour.

  • Slice into equal rectangles and enjoy with a cup of coffee or tea.

Notes

Note 1:Use Medjool dates or any soft date variety, and avoid the dry types, soft dates can be easily transformed to paste.
Note 2: Use parchment paper here to fold the log, it makes the folding process way easier.
Note 3: For cleaner cuts, place the log in the fridge for 1 hour or freezer for about 15 minutes. Then using a sharp knife divide the log to equal pieces.
