Frozen Lazy Cake (Video)

Lazy Cake! Easy, delicious and impressive. A chocolate-plain cookie cold cake, made using real chocolate. It is rich, fudgy, chocolatey and super decadent!! I guess it is called lazy since it doesn’t require any baking!

What I like about this cake is that you can freeze leftover pieces for other occasions or lunch snacks.

Serve it frozen, cut the desired slices, wrap the rest tightly in a plastic wrap and return back to the freezer. Lazy cake will keep well in the freezer for two months. This makes a great solution for unexpected guests!

  • Dried figs, raisins and nuts can be added to the mix of ganache and vanilla wafers.
  • Note: If the cake sticks to the pan when converting to a platter, hold the pan over a low flame for about 10 seconds, invert the cake to a flat dish and the cake will come out nice and firm.

 

Rich, fudgy, chocolatey and super decadent lazy cake!!

Place the dark and milk chocolate in a saucepan.Add the egg yolks, sugar, heavy cream, vanilla extract and melted butter.

Whisk the saucepan mixture over medium heat, incorporating to obtain a shiny chocolate sauce . Bring to a gentle simmer and set aside. Later, add the crushed plain cookies(Vanilla wafers)

Place the plain cookies (vanilla wafers) in a large bowl.

Roughly crush with your hands.

Add the chocolate sauce (ganache) to the crushed cookies

Stir well to homogenize the mixture.

Lightly grease a large ring cake pan, and transfer the mixture to it.Place in the freezer overnight.

This is a big batch lazy cake that can easily feed 25 persons, you might be wondering if you can cut down the recipe by half, the answer is absolutely yes, you need just to reduce the ingredients by half. The reason why I make a big batch is that it is a frozen lazy cake that keeps well in the freezer for 2 weeks, and because there is always a welcomed opportunity for a good lazy cake whenever we need a last minute treat to enjoy and don’t have time to rush around and make something. This is also perfect to make ahead when entertaining a crowd! Watch th video tutorial above!

Ingredients:

  • 400 g./14 oz. dark chocolate, cut into small pieces
  • 400 g./14 oz. milk chocolate, cut into small pieces
  • 7o0 g./ 1 lb. 9 oz plain cookies (vanilla wafers)
  • 6 egg yolks
  • 2 cup heavy cream
  • 1  1/2 cups sugar
  • 1 teaspoon vanilla extract
  • 1 cup/2 sticks / 227 g.  butter

Directions:

  1. Place the cookies in a large bowl, and roughly crush with your hands. Set aside.
  2. Separate the eggs, and use only the egg yolks.
  3. Melt butter over low heat.
  4. Place the dark and milk chocolate in a saucepan.
  5. Add the egg yolks, sugar, heavy cream, vanilla extract and melted butter.
  6. Whisk the mixture continuously, over medium heat,until you end up with a shiny chocolate sauce. Bring to a gentle simmer and set aside.
  7. Add the chocolate sauce (ganache) to the crushed cookies and stir.
  8. Lightly grease a large ring cake pan, and transfer the mixture to it, or alternatively, press a parchment into the bottom of a large loaf pan (as seen in the video) and up the long sides so that there’s an equal amount of overhang on all sides. Transfer the mixture to it. Place in the freezer overnight and preferable for 24 hours.
  9. Turn the lazy cake out of the pan and onto serving plate, and gently peel the parchment.
  10. Serve it frozen, just like you are treating an ice-cream cake, cut the desired slices, wrap the rest tightly in a plastic wrap and return back to the freezer. Watch th video tutorial above!
