Fried Halloumi Cheese Salad

This wonderful fried halloumi cheese works really well with mixed green lettuce, cherry tomatoes, black olives, and a dressing based on a reduction of balsamic vinegar and extra virgin olive oil. Can be served as a starter or a meal in itself.

Pat the cheese dry with a paper towel.
Slice the cheese about 1 cm/½ inch thick.
Dredge each slice of halloumi in the flour and coat on both sides.
Heat oil and butter in a saucepan over medium heat. Add the halloumi and cook until golden brown on both sides.
Spoon the green mix, black olives, and cherry tomatoes over a serving plate.
Top with fried halloumi. Drizzle the balsamic vinegar reduction and olive oil on top. Serve immediately.

Ingredients
 

  • 150 g./5.2 oz. halloumi cheese
  • 2 tablespoons flour
  • 1 tablespoon butter
  • 4 cups mixed salad green
  • 5 cherry tomatoes halved
  • 2 tablespoons canola oil
  • 1 tablespoon butter

For the dressing:

  • ¼ cup a reduction of balsamic vinegar
  • ¼ cup extra virgin olive oil

Instructions
 

  • Pat the cheese dry with a paper towel.
  • Slice the cheese about 1 cm/½ inch thick.
  • Dredge each slice of halloumi in the flour and coat on both sides.
  • Heat oil and butter in a saucepan over medium heat. Add the halloumi and cook until golden brown on both sides.
  • Spoon the green mix, black olives, and cherry tomatoes over a serving plate.
  • Top with fried halloumi. Drizzle the balsamic vinegar reduction and olive oil on top. Serve immediately.

  • Halloumi grills easily but it needs to be eaten quickly.
