Garlic Shrimp Spaghetti
Garlic Shrimp Spaghetti
This garlic shrimp spaghetti is always a family favorite. It makes a great dinner, and the best thing about it is that it takes 20 minutes to put together. I love to add chopped cilantro to the dish while sautéing the garlic. It gives the dish a vibrant color and a delicious flavor, but most of the time I prepare it without cilantro since my family is not a huge fan of it. Try it with or without to decide which version you prefer.
Ingredients:
1 kg./2 lb. 4oz. unpeeled shrimp
400 g./14 oz. spaghetti
2 ½ cups heavy cream
1 garlic head, peeled and crushed
½ cup chopped cilantro, optional
2 tablespoons butter
2 tablespoons olive oil
⅓ cup Parmesan, grated
Salt to taste
A dash of chili flakes
Directions:
Cook the spaghetti following package directions and drain.
Peel and devein the shrimp saving the heads. Separately wash and drain the peeled shrimp and heads.
Place the butter and oil in a skillet over medium heat.
Add the shrimp heads and sauté for 3 minutes, this will give your dish its unique flavor.
Remove the shrimp heads with a slotted spoon and discard.
Add the peeled shrimp and stir for about 5 minutes, until the shrimp turns opaque. Transfer to a dish and cover.
In the same skillet, heat the garlic and cilantro (if used). Add extra olive oil to the skillet if needed. Sauté for 2 minutes.
Add the heavy cream, Parmesan, salt, and chili flakes. Bring to a gentle simmer.
Add the spaghetti and mix to incorporate. Cook for 30 seconds. You can add 2 tablespoons of freshly squeezed lemon juice, optional.
Transfer to a serving dish and spread the shrimp on top. Enjoy!
