Chocolate Peanut Butter Cake
The two wonderful flavors of chocolate and peanut butter come together in this delicious moist cake … mmmmmm.
Ingredients:
¾ cup butter
2 cups sugar
4 tablespoons peanut butter
6 eggs
2 cups flour
2 teaspoons baking powder
½ teaspoon baking soda
⅓ cup milk
¾ cup unsweetened cocoa powder
½ tablespoon vanilla extract
For the peanut butter frosting:
200 g./7 oz. cream cheese
½ cup sugar
1 cup peanut butter
2/3 cup heavy cream
Directions:
Preheat the oven to 180°C/350°F.
Butter a 30cm/12 inch round cake pan. Line the bottom with parchment paper. Grease the parchment paper.
In a bowl, sift the flour, baking powder, and baking soda.
Using an electric mixer, beat the butter and peanut butter to blend well.
Add the sugar and beat for 30 seconds.
Add the eggs one at a time, beating thoroughly after each addition.
Stir in the milk and vanilla.
Add the flour mixture and stir with a wooden spoon to fully incorporate the batter.
Transfer the batter to the cake tin.
Bake the cake for 35-40 minutes or until you insert a skewer in the center of the cake and it comes out clean.
Remove from the oven and allow to cool.
For the frosting:
In a bowl, beat the cream cheese, sugar, peanut butter, and heavy cream with an electric mixer, ending up with a smooth frosting.
Transfer the cake to a flat dish and spread the frosting over.
Garnish with peanuts.
