Blackberry Salad with Brie Cheese, Almonds and Cranberries
A wonderful combination of fresh lettuce, brie cheese, blackberries, diced apple, slivered almonds and dried cranberries, drizzled with a fantastic blackberry vinaigrette. The cheese, fruits and nuts are always pretty delectable together, and the blackberry vinaigrette ties the whole flavors together with a slight sweet-citrus touch – a real comforting salad that hits a multiple of texture combinations. Ingredients:
1 medium-sized head of lettuce
1 cup fresh blackberries
1 green unpeeled apple, diced
75g./ 2.5 oz.brie cheese, diced
½ cup slivered almonds
½ cup dried cranberries
For the dressing:
1 cup fresh blackberries
4 tablespoons balsamic vinegar
1/3 cup extra virgin olive oil
1 tablespoon sugar
Salt and freshly grated black pepper to taste
Directions:
For the dressing:
In a blender, add the blackberries, oil, sugar and vinegar. Blend until smooth and of one texture.
Strain through a mesh sieve into a small bowl. Adjust salt and pepper to your taste preference.
Assemble the lettuce leaves on a plate and top with blackberries, brie cheese, cranberries, slivered almonds and diced apple.
Drizzle the dressing evenly on top and enjoy.
