Pistachio Butter Cookies Topped with Chocolate and Walnuts
I love those cookies for two reasons, one because pistachios are infused in the dough, and two, they are topped with chocolate and walnuts that makes them wonderfully unique! Seriously amazing … crisp, crunchy, and bursting with flavor, and they are such a great addition to your holiday table – so much textures in one bite! Perfect too with your afternoon tea or your morning coffee!! Enjoy!!
The dough is stiff and hard, you need to place it inside a plastic bag, and flatten it with a rolling pin, then shape it with a cookie cutter and delicately transfer it to a parchment-lined cookie sheet!!
Nuts should be fresh! Buy the finest pistachios and walnuts for best flavor!!
TO PIN IT
Ingredients:
- 4 cups all purpose flour
- 1 cup icing sugar (powdered sugar)
- 4 sticks/2 cups butter (500g)
- 1 cup ground pistachios
- ½ teaspoon vanilla extract
For the topping:
- 200 g./7 oz. milk chocolate
- ¾ cup walnut halves
Directions:
- Preheat the oven to 200°C/400°F.
- In a large bowl, add the flour, icing sugar, ground pistachios, and vanilla.
- Melt the butter over low heat and add to the flour mixture. Rub the mixture together and knead together obtaining a butter dough.
- Place the dough in a large plastic bag and flatten with a rolling pin to a thickness of 1.5cm/about 0.5inch.
- Open the plastic bag and cut the dough into circles using a cutter. Transfer the cookies to a parchment-lined cookie sheet.
- Bake until the cookies turn pale golden.
- Remove from the oven and set aside to cool down.
- Melt the chocolate in a microwave or a double boiler and almost cover the top of the cookies with the chocolate.
- Place a walnut half over each cookie.
