Baby tomatoes and mozzarella balls on skewers, drizzled just before serving with balsamic vinegar reduction sauce and extra virgin olive oil. This recipe taught me that simple recipes can be stylish and delicious.
15 cherry tomatoes, halved
15 baby fresh mozzarella
¾ cup balsamic vinegar
¼ cup extra virgin olive oil
Thread the mini mozzarella balls and the cherry tomatoes on skewers.
To reduce the balsamic vinegar:
Place balsamic vinegar in a saucepan and bring to a boil, then lower heat to medium until it has a consistency of a thin maple syrup.
Drizzle the reduced balsamic vinegar and extra virgin olive oil over the tomato-mozzarella skewers just upon serving.
Note: Reducing the balsamic vinegar will alter the tangy flavor into a sweet one.
